Ladies and gentleman, to your attention a brief description of dishes which we, depending on the menu, will bring you at the banquet.
Borshch
This universal dish had been eaten daily and given at folk parties, called vechornytsi and at weddings.
On Polissya borshch always considered a symbol of the family. Because all ingredients, during it’s cooking in a clay pot, transfer their tastes with each other and become like inseparable one.
Before putting borshch on the table – hostess added some fat with salt and garlic to it. In a good house borscht served hot and with steam. Giving of borscht without steam to guest, or even cold – was considered as contempt. At ancient times meat in the borscht could be found only on big holidays. When there was no fasting – also could be puted a spoon of sour.
Pampushky
Pampushky are donut’s with garlic. The greatest addition to the borshch. These small fluffy buns made of rye or wheat dough. Before serving they will have been poured by garlic juice.
Sandwiches with fat
Hit of all seasons. Aesthetically, tasty and nutritious – no more to say.
Stewed potatoes
In Ukraine called pechenya. Who at least once tasted pechenya from the oven, will never forget how easily it melts in your mouth.
Benderyky
Benderyky – this is a triangular pancakes stuffed with mushrums. Accurate-looking ones that can satisfy the most demanding gourmets.
Shkvarky
On the table is always considered a delicacy. Prepared in a pot with the addition of onion, mainly been submitted to krovyanka, deruny and a variety of meals, or simply with bread.
Deruny
Potato pancakes also called in Ukraine deruny. Аre shallow-fried pancakes of grated potato, flour and egg, often flavored with grated onion or garlic and seasoning. Deruny with sour cream is a traditional part of the festive table.
Black pudding
Called by our people as “krovyanka” from the word “krov” (кров, ukr.), that means means “blood”. Kaszanka (Poland), Boudin noir (France), black pudding (Scotland) and a lot of other names show some passion of European and other nations to blood sausages. On the way to make directly say: there is a proverb – “who loves sausage and politics should not see how they are made”. But it served in very appetizing appearance whith onion and bacon.
Homemade sausage
Is the most common type of sausages that are made from pork. As a filler usually used pieces of meat and fat in proportion 50/50%, add pepper, garlic, and bake in oven on a pan.
Sausages are usually made before Christmas, Easter, and they were honorable and indispensable dish at the festive table. In traditional Ukrainian cuisine – a meal that have been done most on the stock. For long-term storage sausage put in pots, flooded lard into them and kept in a cool place.
Cabbage roll
Also known as “holubtsi”. This great meal named in honor of pigeons (“holub” means – “голуб”, ukr.), birds that symbolize the creative power of fire and from ancient times considered the symbols of the birth of the world. It was difficult to imagine a festive table without holubtsi.
They are prepear with cabbage leaves stuffed with a mixture of millet (later – rice), meat, chopped carrots, onions and spices. Most proper with sour cream and rye bread.
Varenyky
Varenyky in Ukrainian language вареники, singular вареник. This meal had in particular been made on steam, usually a festive meal, because the process of cooking require extraordinary culinary trick. The most popular kinds of this course are stuffed with cottage cheese, with poppy-seeds, with cherries and bilberries, poured by honey.
Verenyky considered on a par with borshch, the most popular dish in Ukrainian cuisine. And our people have liked them so much, that not only sang them in their songs, but also gave them the predominant position in major rites.
For example, on The St. Basil’s Day (January 14) on the table will have sure to stand a bowl full of varenyk’s, stuffed with cabbage.
During the week of Maslyana pancakes and varenyk’s are the ritual foods. Because embodied in theirself a symbol of the sun and moon.
